Oceania Cruises is taking another significant step in enhancing its culinary identity with the announcement of The Floating Pastry Academy, the first-ever floating pastry academy created within the cruise industry.
The new multi-year programme, developed in collaboration with The Butter Book, a prestigious international platform dedicated to professional culinary education, has been designed to refine the skills of onboard chefs and further strengthen the culinary standards that have made the cruise line renowned worldwide.
The new initiative will involve more than 200 Oceania Cruises pastry and bakery chefs, who will follow a three-year training programme combining theoretical lessons, digital education, practical assessments, and hands-on activities carried out directly aboard the ships. This innovative model aims to create a true centre of excellence at sea, supporting the professional growth of culinary talents while ensuring consistency, technical precision, and creativity across the fleet.
With the launch of The Floating Pastry Academy, Oceania Cruises introduces a new approach to onboard culinary training, transforming traditional professional development into a structured and progressive learning journey. The programme will provide team members with advanced tools to further develop their pastry and bakery techniques, with specialised training dedicated to different professional roles and certifications awarded at the completion of each stage.
The initiative represents a further investment in the cruise line’s culinary philosophy, which has always been rooted in the concept of The Finest Cuisine at Sea, with the goal of preserving and passing on the heritage of French gastronomy. Pastry, a central element of the Oceania Cruises dining experience, will be elevated through even more comprehensive training that combines artisanal tradition, innovation, and a continuous pursuit of excellence.
The project has been created through the collaboration of two leading figures in the culinary world: Chef Eric Barale, Executive Culinary Director of Oceania Cruises and a member of the prestigious Maîtres Cuisiniers de France, and Chef Sébastien Canonne, founder of The Butter Book and recipient of the title Meilleur Ouvrier de France (M.O.F.), one of the highest professional distinctions in French gastronomy.
Chef Eric Barale highlighted how the new academy represents a tribute to the traditions that have shaped Oceania Cruises’ culinary identity while also serving as an investment in the future. According to Barale, gastronomic excellence begins with people; therefore, the programme has been designed to support chefs’ professional development, enhance technical precision, and maintain the exceptional pastry standards of Oceania Cruises across the entire fleet.
Chef Sébastien Canonne emphasised the strategic importance of continuous education within the luxury sector, noting that The Floating Pastry Academy provides a model designed to foster innovation and excellence over time, supporting the company’s growth while preserving quality and craftsmanship.
The training pathway will include chef-led digital courses, theoretical assessments, practical exercises, and specialised modules focused on the different disciplines of professional pastry. Each level will be accompanied by certification, creating a clear and structured development system for culinary professionals working at sea.
The new academy forms part of a broader Oceania Cruises initiative dedicated to celebrating and promoting French culinary culture. Upcoming projects include La Table par Maîtres Cuisiniers de France, the first restaurant at sea developed in collaboration with the Maîtres Cuisiniers de France, which will debut aboard Oceania Sonata in 2027. The new vessel will become the ninth ship in the Oceania Cruises fleet and the first of five next-generation ships in the Sonata Class, representing the future direction of the brand.
