Diamond Princess: New Culinary Experiences at Sea


Princess Cruises’ 2026 Asia season opens under the banner of culinary innovation. On board Diamond Princess, two new specialty restaurants make their debut, set to redefine the dining experience at sea: Makoto Ocean and Crown Grill, the latter already regarded as a true icon of the brand.

The introduction of these two venues marks a further step in the company’s strategy to deliver increasingly refined, international and distinctive dining, in line with the expectations of a global and discerning clientele.

Already popular aboard Sun Princess and Star Princess, Makoto Ocean now arrives on Diamond Princess, bringing the elegance and purity of Edomae-style Japanese cuisine to the high seas. Located on Deck 7, the restaurant offers a sophisticated setting where every detail—from mise en place to plating—reflects a minimalist and refined aesthetic.

At the heart of the culinary concept is Chef Makoto Okuwa, a master of Edomae-style sushi with more than 25 years of experience. Recognized as one of Miami’s most accomplished chefs, Okuwa has built his reputation by blending Japanese tradition with modern techniques and a creative approach that highlights carefully selected, seasonal ingredients. The menu celebrates Edomae sushi—originating in ancient Tokyo and defined by precise marinating and fish-preparation techniques—reinterpreted through a contemporary lens. Signature dishes include truffle salmon, snow crab temaki and toro tartare, perfect examples of balance between flavor, texture and artistic presentation.

The experience is further enhanced by handcrafted cocktails inspired by Japanese flavors, such as the Genmai Negroni and Kodai No Hana, which combines yuzu juice with traditional Doburoku sake. Each beverage pairing is thoughtfully designed to complement and elevate the chef’s creations.

Makoto Ocean is more than a restaurant; it is a sensory journey that unites culinary innovation with deep respect for tradition. The vibrant colors of the sashimi, the precision of each cut, and the harmonious composition of every plate transform each course into a work of art designed to delight both the eye and the palate.

On Deck 5, in the former Savoy Dining Room, Crown Grill also makes its debut. The signature steakhouse of Princess Cruises and a long-time guest favorite, it evokes the warm and sophisticated atmosphere of classic American steakhouses. Rich mahogany wood, soft lighting and impeccable service create an intimate and elegant ambiance.

Crown Grill features premium USDA Certified Black Angus beef, carefully selected and expertly prepared to highlight the quality of the ingredients. Among the specialties are a tender 7-ounce filet mignon (approximately 200 grams) and an impressive 36-ounce wet-aged bone-in rib-eye (around one kilogram), ideal for sharing. The latter is offered in partnership with Goodstock by Nolan Ryan, a brand associated with the legendary Texas pitcher and rancher Nolan Ryan. The menu extends beyond fine cuts of beef, also including refined seafood dishes, creating a balanced “surf and turf” experience that broadens guests’ choices.

A distinctive feature of the dining experience is the exclusive “salt menu,” a curated selection of premium salts from around the world designed to enhance the aromatic nuances of each cut of meat. An extensive wine list completes the culinary journey, with carefully selected labels chosen to pair perfectly with every course. Crown Grill has repeatedly been recognized among the best steakhouses at sea, consolidating its reputation for excellence within the international cruise industry.

Sami Kohen, Vice President Food and Beverage of Princess Cruises, stated that with Makoto Ocean and Crown Grill now aboard Diamond Princess—recently introduced as well on sister ship Sapphire Princess—the company is proud to further enhance the guest experience as the ship sails across Asia and in anticipation of the 2027 Japan season, which will feature two vessels.

The strengthening of the culinary offering is part of a broader project: in 2027, Princess Cruises will present the most extensive Japan season in its history. For the first time, two ships—Diamond Princess and Sapphire Princess—will operate throughout the entire season from the Tokyo region. The program includes 78 departures across 50 unique itineraries, with voyages ranging from 7 to 28 nights between March and December 2027. It represents the company’s most significant deployment in Japan to date, reflecting a growth strategy firmly focused on the Asian market. Currently, Diamond Princess sails roundtrip from Singapore, offering immersive itineraries across Southeast Asia with calls in Thailand, Malaysia and Vietnam before returning to Japan.

With the arrival of Makoto Ocean and Crown Grill, Diamond Princess further strengthens its identity as a ship capable of combining tradition and innovation, offering guests a culinary journey that ranges from the refined artistry of Edomae sushi to the rich flavors of a classic American steakhouse.
