The “chef of the sea”, always puts the sea at the center of everything. His accurate menus are wrapped by the intense marine flavor, where Leon wanted to make the protagonist a whole new ingredient: the plankton. Among his most appreciated dishes there is in fact the plankton rice together with the delicate cream of sea urchins.
